Shrimp Scamp with Capellini
In a hot sauté pan, add butter, garlic, pepper and shrimp.
Sauté 2 minutes on each side until shrimp is almost cooked,
Add house wine and reduce by half.
Then add rosemary compound butter and grape tomatoes, sauté for 30 seconds.
Add heavy cream and lemon juice and heat until combined.
Put cooked capellini with shrimp and sauce on a plate.
Steak and Greens Salad
Put half an once of oil and half an ounce of butter in a medium high heated pan until it foams.
Place steak in a pie tin and sprinkle both sides evenly with garlic and herb rub.
Place steak in sauté pan and sear for 4-5 minutes on each side.
While steak is cooking, place baby kale, arugula, spinach, radicchio, and oreganata sauce in a bowl and toss to coat.
Put salad in a bowl and garnish with gorgonzola cheese and crispy prosciutto.
Place steak on top with more oreganata sauce and crispy onions.
