Texas Pete-infused Maltagliata

1½ cups flour

1 pinch kosher salt

4 eggs

6 egg yolks

1 splash Texas Pete

A little bit of fresh rosemary

1 splash EVOO


Puttanesca Sauce

Chef's description: An intensely aromatic, spicy mélange of tomatoes, onions, capers, black olives, anchovies, oregano and garlic.

¼ cup EVOO

3 cloves garlic

4 anchovies

2 pounds fresh tomatoes

1 cup olives

2 tablespoons capers

½ teaspoon red pepper flakes

Salt and pepper


Saute garlic and anchovies. Add tomatoes, olives, capers, red pepper flakes, and season liberally. Cook 8-10 minutes.
