Pumpkin Pecan Coffee Cake
2 Cups all-purpose flour 1 Tbsp Vanilla
¼ Tsp Salt 1/2 Cup Brown Sugar
1 Tbsp Baking Powder 1/2 Cup Rough Chopped Pecans
1 Cup Softened Butter (2 sticks) 1 Tbsp + 1 tsp Pumpkin Pie Spice
1 Can Pumpkin 1 Tbsp Butter (melted)
1 ½ Cups Sugar 2 Eggs
1 Tsp Cinnamon
To make topping:
Rough chop pecans and set aside. In medium bowl melt 1 Tbsp butter then, mix in brown sugar and cinnamon. Stir all ingredients until crumbly. After coffee cake mixture is spread into pan crumble over top along with the pecans.
In a large bowl, cream butter until light and fluffy. Gradually beat in pumpkin, Then beat in sugar. Beat in eggs on at a time, then stir in vanilla.
Sift together the flour, baking powder, pumpkin pie spice and salt. Then by hand fold into egg mixture.
Spread batter in cooking oil sprayed 9x13 pan and sprinkle topping on top of batter.
Bake in 350-degree oven for 30 minutes or until toothpick inserted into center comes clean.
Mix 1 cup sifted powdered sugar, 3 Tbsp milk and 2 Tsp of vanilla in a bowl and drizzle over cooled coffee cake.
