Recipes From Harper's: Colorado Chili & Guacamole

Colorado Chili

1 tablespoon oil

1 ¼ pounds ground sirloin

¾ teaspoon oregano

½ teaspoon cumin

1 ¼ teaspoon ground black pepper

½ teaspoon cayenne

½ tablespoon salt

1 ½ tablespoon chili powder

3 tablespoon sugar

1 small green pepper diced ¼”

1 small yellow onion

¼ cup diced canned green chiles

½ ounce minced garlic

1 tablespoon samsons sauce

1 ½ ounce chili sauce

¼ cup tomato paste

3 cups diced canned tomatoes

3 cups crushed tomatoes

3 cups dark kidney beans with half the juice drained off

 

  1.  Brown beef in oil with all the spices until done, then remove and drain off all but 1 tablespoon of remaining fat
  2. Add vegetables to pot and saute until tender
  3. Add remaining ingredients to vegetables and return beef to pot and bring to a simmer for 10 minutes or until heated through

Garnish with Sour Cream, shredded cheddar cheese and chopped scallions

Guacamole

¼ cup diced yellow onion

½ cup fresh diced tomatoes

¼ cup diced canned green chiles

2 tablespoon lemon juice

1 ¼ tablespoon lime juice

½ teaspoon salt

¼ teaspoon pepper

¼ teaspoon cumin

¼ teaspoon tobacco

¼ cup pace picante

½ tablespoon minced garlic

¼ teaspoon ground coriander

 

  1.  Combine all of above ingredients
  2. Dice 8 avocados and combine with mixture and mix well while smashing some of the avocado but still leaving nice chunks.

Serve with tortilla chips or vegetable spears
