Cooking With La Fiesta Part 2

La Fiesta is joining the Good Morning Show! They made a delicious Arroz Norteño Con Queso & Pico De Gallo and Sopa de pollo.

Arroz Norteño Con Queso & Pico De Gallo 

1\2 pound shrimp (deveined and clean) fine chopped
½ pound flank steak fine chopped
½ pound chicken breast fine chopped
½ cup melted cheese
½ cup chopped onions
½ cup chopped mushrooms
Pinch powder garlic
Pinch black pepper
Salt
2 cup Spanish rice


Procedure
In a pan grill all meats with some oil until done, add onions and mushrooms until soften then season with garlic, pepper and salt. Served over Spanish rice and topped with melted cheese and garnish with cilantro leaves.


Sopa de pollo (chicken soup)


2 chicken breasts
1 cup Spanish rice
½ avocado
Chicken broth
Pico de Gallo (diced tomatoes, onions, jalapenos, cilantro and lime juice)
I celery stick
1 whole jalapeno
Salt and pepper
½ onion
1 large tomato


Procedure
In a pan set tomato, onion, jalapeno chicken salt and pepper, celery stick and fill with water to a boil for 30 minutes then shred the chicken. In a bowl serve rice, shredded chicken, pico de gallo and slices of avocado; fill the bowl with chicken broth.
