Pastrami Melt

Rye

Pastrami ~ thinly sliced

Caramelized Onions ~ thinly sliced and sautéed with butter and salt

Sliced cheddar cheese

Smoky Garlic Mayo~ blanch 2 cloves of garlic, and place in food processor with olive oil, mayo, and a dash of smoky paprika

Grill as a Panini

Muddy Creek New South  Pimento Cheese Panini

Makes 4 sandwiches, plus some leftover pimento cheese for snacking

1 pound good-quality extra-sharp cheddar cheese
3 large red roasted red peppers, drained and diced
4 scallions, diced
1 cup mayonnaise
1 1/2 tablespoons  Texas Pete (more or less to taste)
3/4 tablespoon Worcestershire sauce
8 slices panini bread
olive oil

Using a food processor, shred cheeses until finely grated, and then pour cheese into a large bowl. Pulse peppers and scallions in the processor until diced; add them to the cheese. To the cheese mixture, add mayonnaise, hot sauce and Worcestershire. Mix to combine.
