Zoe's Kitchen Introducing New Kids Menu: Pizza Piadina

GREENSBORO, NC -- Erin Williams with Zoës Kitchen joined Meghann Mollerus on the Weekend Good Morning Show to talk about changes coming to the restaurant's menu.

The new Zoës Kitchen kids menu offers wholesome and diverse selections for Generation Z’s evolving taste buds. Post-millennials are open-minded eaters with sophisticated palates; global influences are their norm. They desire more variety and meals that are made-from-scratch, and tend to gravitate towards fast casual dining.

 Each entrée is served with a choice of side, offering kids the opportunity to create a custom, balanced meal. Entrées include:
o Salmon or Shrimp Kabobs
o Ham and Cheese Piadina made with fresh mozzarella and rosemary ham
o Pizza Piadina made with mozzarella, parmesan, and a new Mediterranean tomato sauce
o Orzo Pasta Bowl
o Healthful side options of hummus, Greek salad, roasted veggies, pesto farro, and fresh fruit

These dishes, along with the rest of the items on Zoës menu,  were born in the Mediterranean, raised in the South! They were designed with our Mediterranean food philosophy, featuring ingredients such as whole grains, fresh vegetables, fruits, and seafood, and incorporating grilling as the predominant method of cooking.

RECIPES

Pizza Piadina with Side Greek Salad
Piadina
Pomodorina Sauce
Mozzarella Cheese
Grated Parmesan Cheese
Dried Oregano

Spread Pomodorina sauce evenly across the bottom half of the piadina. Distribute Mozzarella and Parmesan Cheese evenly across sauce. Shake the oregano over the cheese and fold. Place on grill for 2.5-3 minutes, flip and grill for 2.5-3 minutes.

Shrimp Kabobs with Farro
3 peeled shrimp
3 slices of zucchini
Olive Oil for grilling

Skewer the zucchini and shrimp in an alternating pattern.  Brush with olive oil and grill for 3 minutes per side or until cooked through.

Pesto Farro
Farro, cooked
Roasted Tomatoes, chopped
Basil Pesto
Lemon Juice
Extra Virgin Olive OIl

Pesto Farro: Bring 4 cups of lightly salted water to a boil; add 1 cup farro. Cook for approximately 16 minutes or until al dente; drain, then cool. Combine all ingredients for Pesto Farro in a mixing bowl and mix gently until fully incorporated.
