MIT: Kalo Foods, A Commercial Gluten-Free Bakery

Stokesdale, NC -- A new bakery in Rockingham County is creating delicious, gluten free treats.

Kalo Foods, LLC in Stokesdale makes products like cupcakes, cookies, brownies, bread, pizza crust and do-it-yourself pancake and waffle mixes. The business opened in February and it already has dozens of clients across North Carolina, Virginia and Washington DC.

President, Michael Cusato, came up with the idea to open the business because his wife has Celiac Disease. Cusato said, "I tried a number of the foods my wife had to eat that were gluten-free. Not a lot of taste, not a lot of texture." So he and some family members started creating new recipes without wheat.

The bakery uses many traditional ingredients such as sugar, cocoa and brown sugar but white flour is not used. Instead, tapioca and rice flour are the common substitutes.

Head baker Judy Doan, a professional baker for more than 20 years, exclaims, "It's wonderful. I cannot taste the difference!"

Perhaps Kalo is a fitting name for the company. "Kalo" means "good" in Greek. The company is doing good by hiring veterans. Cusato himself is a service disabled veteran.
