Recipe: Bib's Smoked Meatloaf

Smoked Meatloaf:
2 1/2lbs of ground chuck beef
2 1/2 of ground veal
2Tbs of Bib's Dry Rub or your choice of dry rub
2Tbs of garlic
2Tbs of black pepper
2Tbs of your favorite all purpose seasoning(can't tell what Bib's uses)
1/4 cup of Bib's House Sauce or a sauce of your choice
3/4 cup of ketchup
1 cup of brown sugar
3/4 cups of chopped onions
2 cups of crushed Ritz Crackers
3 eggs

Mix all ingredients well (except the dry rub) and place into a loaf pan.

Sprinkle the dry rub on top of the loaf.

Smoke on a 250 degree smoker for about 3 hours
until the meat reaches 160 degree F. or bake in a 350 degree oven for about 1 1/2 hours or until done,160 degree F.

You can make any type of sauce you like to accompany your meatloaf.
