Celebrate Cinco De Mayo With These Simple Mexican Recipes

2 avocados
1 cup diced tomatoes
1 cup chopped cilantro
½ cup chopped red onions
½ cup diced jalapeño pepper
Salt and pepper
Lime juice

What to do:
In a bowl put the avocados, tomatoes, jalapeños and onions,
Smash everything with a fork until get a uniform paste then add cilantro, lime juice, salt and pepper
Serve with a nacho chips on top!


Tacos de Pescado (Fish Tacos): 

One tilapia fillet (6-9 oz.)
2 flour tortillas
1 cup Spanish rice
½ cup tartar sauce (optional)
½ cup shredded cheese
2 tsp. of sour cream
½ cup of diced tomatoes
Pickled cabbage
Lemon pepper seasoning salt
1 lime

What to do:

Grill tilapia fillet until fully cooked
Grill the tortillas with some butter
On each tortilla put some sour cream, one half of the tilapia fillet and topped with
Pickled cabbage, tomatoes and cheese then fold it to make a real taco!


Camarones Fundidos:

12 Shrimps (peeled and deveined)
½ cup diced Green peppers
½ cup diced onions
½ cup sliced mushrooms
½ cup diced squash
1 ½ cup of shredded cheese (white American or mozzarella)
1 cup Spanish or steamed rice
Shredded lettuce
1 tbsp. of sour cream
2 tbsp. of Butter

What to do:
Put some butter on a good size fry pan, add shrimp and cook them for a few minutes,
Add all veggies, salt and cook just a few more minutes. Add cheese and let it melt
On a plate put good portion of lettuce, sour cream and slice of tomato, on the other side put Spanish or
Steamed rice and shrimp.
