Your Favorite Dessert Place: Maxie B's

GREENSBORO, NC -- It is what we bring to people when they're celebrating something or when they need a pick-me-up. Dessert is always appropriate!

2WTK viewers picked Maxie B's in Greensboro as your favorite dessert spot.

If you've never been, it's more than a place to order a cake and leave. With it's comfy chairs and sitting nooks, it's a dessert destination and even a date night spot.

Layer cake, pound cake, cupcakes. They're frosted, drizzled, stuffed with yummy fillings.

"It's really a part of our southern heritage, these cakes, these recipes, " says owner Robin Davis. "From old church cook books and family recipes and things like that it's a part of who we have been and I don't want that to go away."

But Robin didn't set out to build a baking business.

"It was an accidental bakery. I was craving chocolate." She whipped up a chocolate cake to satisfy her craving. Now decades later, Maxie B's has a team, mixing, baking, frosting and decorating. And while the frosting is fluffy the numbers are formidable.

To make 75 cakes and 350 cupcakes a day Maxie B's uses 200 pounds of powdered sugar--in a day!

Along with 40 pounds of butter, and that's just for the buttercream frosting!

"We are sticklers for natural ingredients here." Robin explains that means real butter, locally farmed eggs, pure real vanilla

"That's what makes everything takes so good and even if it is dessert, at least you're eating real food not the artificial chemical that is so easy to consume these days."

On any given day you have 42 cake flavors to choose from. But you won't find the calories listed.

"We really don't want to know what the calories are. We have people ask every now and then. I don't want to know but I do think my favorite the German Chocolate might have the most calories in here!"

No hard numbers, but Robin believes the German Chocolate and the Banana Pudding cakes are the two with the highest calories due to the added fillings in them. The lowest calorie cake she guessed was the Strawberry Shortcake, which is seasonal. It comes back in the spring, whenever that happens with all the winter weather we've had lately!

All of us in the 2WTK unit were surprised to find out bakeries are not inspected by the health department. Bakeries are considered manufacturers so the Dept. of Agriculture inspects them and the results aren't made public. We checked, Maxie B's didn't have any problems mentioned in their last inspection.

*How to keep your cake from sticking to the pan. Robin shows what Maxie B's does: spray the pan with non-stick spray, cut a piece of wax or parchment paper to the size of bottom of the pan, then spray again. No flour needed and no mess made.

*How to keep crumbs out of your frosting. Robin says let your cake cool. Make 1.5 times the icing the recipe calls for.(She says when you're worried about running out of icing, you get stingy and that affects how much frosting you'll put on the cake which then leads to crumbs!) Be generous with the icing and ice the cake with what she calls your "crumb coat". What you're doing is sealing all the crumbs into this layer of frosting. Then put the cake in the fridge or freezer for a couple of minutes. This allows the frosting to make a harder layer. When you put the next layer of frosting over, it glides on and no crumbs!
