Perfect Chocolate Cake Recipe
1c cocoa, 2c boiling water, 1c butter, softened, 2 1/2 c sugar, 4 eggs, 1 1/2 tsp vanilla, 2 3/4 c all-purpose flour, 2 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt
Combine cocoa and boiling water and stir until smooth. Cool. Cream butter, sugar, eggs, vanilla at high speed in electric mixer and beat 5 minutes. Combine flour, soda, powder, salt and add to creamed mixture, alternating with the cocoa mix. Pour into pan and bake at 350 degrees for 25-30 minutes. Cool.
For the frosting...Vanilla buttercream frosting: 1 1/2 c butter, 4 c powdered sugar, 2 tbsp milk, 1 tsp vanilla Cream butter in mixer. Add sugar, a bit at a time, and beat until fluffy. Add milk and beat again, then add the vanilla and stir. Chill until cold. For chocolate buttercream, add 1/4 cocoa powder in with the sugar.
