Cooking Italian Chicken Marsala & Piccata

GREENSBORO, N.C. -- Rosario Mascali knows Italian food. He owns three Italian restaurants in the Triad and today he is showing you how to give two simple dishes that gourmet touch. His restaurants are New York Pizza on Battleground Ave, Pizzeria L'italiano in downtown Greensboro, and L'italiano Ristorante in High Point.

Chicken Marsala
2 skinless and boneless chicken breasts
Salt and pepper
All purpose flour
5 tablespoons butter
6 tablespoons olive oil
1/2 cup chicken stock
1/2 cup marsala wine
Shitake and button mushrooms
1/4 cup of heavy cream
Fresh chopped parsley

Chicken Piccata
2 skinless and boneless chicken breasts
Salt and black pepper
All purpose flour
5 tablespoons butter
6 tablespoons olive oil
1/2 cup chicken stock
1/4 cup lemon juice
1/4 cup capers
Shiitake and button mushrooms
Fresh chopped parsley
