From The Kitchen: What Golfers Eat At The Wyndham

GREENSBORO, N.C. -- This week is all about the golf, the greens and of course, the food!

With thousands of golf enthusiasts descending on Sedgefield Country Club for the Wyndham Championship, the kitchen staff at Sedgefield Country Club has a very important job to do.

Executive Chef James Patterson and Sous Chef Isaac Spencer shared some of the dishes they're making this week for the players and private box seats.

"Carolina Caviar"

From The Kitchen of James R. Patterson III

~This side dish can be served and used in a Multitude of ways, I personally enjoy it with Corn Tortilla Chips as a Snack.


Caviar Mixture:

2 (15 oz.) cans Black-Eyed Peas, drained and rinsed

1 Jalapeno Pepper, skinned, deseeded and finely diced 1 Cup of Diced Tomatoes

1/2 Cup of a Sweet Bell Pepper (yellow, red, or orange), skinned, deseeded and finely diced
1/2 Cup of a Red Onion, finely diced
1/2 Cup of a English Cucumber, thinly sliced and finely diced

1/2 bunch of Cilantro, finely Chopped

1/4 c. Apple Cider Vinegar
1/4 c. Canola Oil
1/2 tsp. Brown Sugar
1/4 tsp. Kosher Salt
1/4 tsp. Freshly Ground Black Pepper

Whisk together the Ingredients for your dressing in a Small Bowl, or use a blender if you would like.
Combine all of your Caviar Mixture in a mixing bowl and toss with dressing.
This can be eaten right away, I like to let it marinate and chill in the refrigerator for two hours.

"J.P.'s Signature Rub"
From The Kitchen of James R. Patterson III
~This rub is best used on Baby back ribs but can easily be used on beef, chicken, or anything that you may want to smoke or grill.

- 1 tablespoon smoked paprika
- 1 tablespoon dark chili powder
- 1 tablespoon kosher salt
- 1 tablespoon old bay seasoning
- 1 tablespoon mesquite seasoning
- 1 tablespoon dark brown sugar
- 1 1/2 teaspoons celery salt
- 1 1/2 teaspoons cayenne pepper
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons dry mustard
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons ground black pepper

- combine all ingredients in a zip loc bag or container and shake until all parts are well mixed.
