Clara Marie's Authentic Southern Bakery shares recipe for strawberry amaretto cupcakes:
1 cup white sugar 1 ½ cups AP Flour
½ cup butter (room temp) 1 teaspoons baking powder
2 eggs (room temp) ½ cup whole milk
2 teaspoons vanilla extract
1 cup sliced strawberries 1 tbsp white sugar
1 tbsp Amaretto liqueur
2 sticks of butter ½ cup of Amaretto
6-8 cups of powdered sugar
Preheat oven to 350 degrees. In a mixing bowl beat together sugar and butter. Beat in eggs one at time, then, stir in vanilla. Combine flour and baking powder, add to mixture. Finally add milk slowly. Bake for 20-25 minutes. Use ¼ cup to scoop batter into cupcake pan (they rise a lot).
Put 1 pint strawberries in a bowl, add 1 tablespoon sugar and one tablespoon Amaretto. Chill for one hour.
When cupcakes are cool, core out the centers and add strawberries with a little syrup from the bowl.
Yields 18 servings.
