Key Lime Curd Tart Recipe

• 3 large eggs
• 3 large egg yolks
• 1/2 cup sugar
• 1/3 cup fresh Key lime juice (from about 18 limes) or regular fresh lime juice
• 3 tablespoons fresh lemon juice
• 1/4 teaspoon coarse kosher salt
• 1/2 cup (1 stick) unsalted butter, cut into 1/4-inch cubes


Whisk eggs, yolks, sugar, lime juice, lemon juice, and coarse salt in medium metal bowl. Set bowl over medium saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until curd thickens slightly and instant-read thermometer inserted into curd registers 140°F for 3 minutes, 5 to 6 minutes total (do not allow to boil). Remove bowl from over water. Gradually whisk butter into curd a few cubes at a time until smooth, allowing butter cubes to melt before adding more. Strain curd through fine sieve set over small bowl. Press plastic wrap directly onto surface of curd and chill overnight.

Lime curd can be made 2 days ahead. Keep chilled.

Bavarois Cake/French Cupcakes

Note:The bavarois cakes shells can be purchased thru Nif-t-Foods as a single or several item order.

Ordered cake shells will be dry. Upon making your dessert, first soak with simple syrup and amaretto liqueur.
Simple syrup: 1 part amaretto 2 parts sugar and 3 parts water. Heat contents on open stove until the sugar dissolves completely. This can be done several hours ahead to give the contents time to cool.

Using a squeeze form bottle fill with amaretto symple syrup, soak bavarois with contents let sit for a least an hour.

Cheese Cake Filling

the cheese cake filling can be made from using jello "no bake" cheese cake mix. Mix contents according to package.
layer your bavarois with cheese cake and your favorite fresh fruit. Top with white chocolate mousse and adorn with fresh fruit.

White Chocolate Mousse

In a mixing bowl, pour 16oz (2cups) of cold milk add pouch contents of knorr dessert mix. Beat at medium speed for 2 minutes then at high speed for 3 to 5 minutes until fluffy. Then pipe onto tarts or your favorite dessert. The white chocolate mousse can be purchased locally at Southern foods in Greensboro.
