Tailgating with a Twist: Healthy Options

GREENSBORO, NC -- The Carolina Panthers are back in action tonight to kick off the NFL's regular season. Of course, the action on the field also means party in the parking lot! But tailgating doesn't have to be unhealthy!

Nutrition expert Rima Kleiner is here to talk about some healthy, but delicious tailgate options! The average tailgater eats a full day to a day-and-a-half worth of calories during the game alone. Nachos can have 450 calories. Hot wings with blue cheese sauce can have 1,178 calories. Bratwurst can have 450 calories.

So Kleiner shared some healthy, but tasty tailgate treat options!

BBQ Salmon Sliders
3 (5-oz.) cans or pouches of salmon
1 celery stalk, finely chopped
¼ red onion, finely diced
1 garlic clove,minced
2 Tbsp. BBQ sauce
1 Tbsp. Dijon mustard
¼ cup whole wheat breadcrumbs or panko
2 Tbsp. freshly grated Parmesan cheese
¼ tsp. salt
½ tsp. black pepper
½ tsp. onion powder
½ tsp. smoked paprika
Whole wheat mini buns


Preheat grill or grill pan to medium-high heat.
In a medium bowl, combine all ingredients except buns (salmon through paprika). Mix well to combine. Form into small patties. Cook over medium-high heat until golden on both sides, about 3-4 minutes per side. Serve on top of whole wheat mini buns with desired toppings. Makes 4 main servings or 8 appetizer-sized servings.

 

Tuna Tacos
2 (5-oz.) cans or pouches of tuna
3 Tbsp. red onion, diced
1 jalapeno, finely chopped
3 Tbsp. light mayonnaise
2 Tbsp. hot sauce
1-2 Tbsp. lime juice, freshly squeezed
2 cup broccoli slaw
1 avocado, sliced
1 mango, sliced
¼ cup cherry tomatoes, quartered
8 corn tortillas
Salt and pepper, to taste


In a small bowl, combine first 6 ingredients (tuna through lime juice); mix well. Add mixture to corn tortillas and top tacos with slaw, avocado, mango and tomatoes. Makes 8 tacos.

Kale Chips
2 cups bagged kale or kale leaves, washed and thoroughly dried with stems removed
2 Tbsp. olive oil
Sea salt, as desired
Sprinkle of ground cinnamon, if desired


Preheat oven to 275 degrees F. Tear kale leaves into bite-sized pieces. In a large bowl, toss kale leaves with oil and salt. Place on baking sheet. Bake until crispy, about 20 minutes, turning pan and flipping chips halfway.


Sweet Potato Chips
2 sweet potatoes, thinly sliced (try to slice as uniformly as possible)
2 Tbsp. olive oil
Sea salt, as desired


Preheat oven to 250 degrees F. In a large bowl, toss sweet potato slices with olive oil and salt. Place on baking sheet. Bake for about 2 hours, turning pan and flipping chips about halfway. Remove once chips are crisp and golden brown. Let cool for 10 minutes.
