Zoe's Kitchen: Turkey Stacks & Kabobs

If you don't feel like cheating your diet this Thanksgiving, how about a couple healthier takes on Turkey Day dishes? Erin Williams with Zoe's Kitchen stops by the Good Morning Show Sunday to help us prepare 'turkey stacks' and a variety of kabobs. 


Turkey Stack

  • Sourdough bread
  • Feta cheese
  • Parsley
  • Mozzarella cheese – shredded
  • Sliced turkey
  • Olive oil/rosemary oil
  • Tomato slices
  • Lettuce


  • Chicken and steak kabobs with roasted peppers and tomatoes
  • Shrimp and salmon kabobs with zucchini
  • Veggie kabobs – Portobello, zucchini, peppers, onions and tomatoes
  • Israeli skhug sauce
  • Italian salsa verde
  • Greek tzatziki
  • Moroccan harissa sauce


Turkey Stack

  • Step 1: Take two thick slices of sourdough bread and evenly spread feta cheese on each slice. Sprinkle parsley on top of the cheese.
  • Step 2: Layer on some shredded mozzarella cheese onto each slice.
  • Step 3: Layer on some sliced turkey left over from your Thanksgiving feast.
  • Step 4: Put the sandwich together and baste the bottom side of the sandwich with olive oil and fresh rosemary.
  • Step 5: Place the sandwich oil-side down on a skillet over medium-low heat. Baste top side of sandwich with olive oil and rosemary.
  • Step 6: Grill for 1 minute or until bread is golden brown and cheese is melted.
  • Step 7: Remove the sandwich from the grill and place on cutting board. Remove the top slice of bread and add two slices of tomato and some lettuce.
  • Step 8: Put the sandwich back together, cut diagonally and serve!


  • Step 1: Season your protein with spices or a marinade.
  • Step 2: Cut your protein and veggies into smaller pieces, then skewer.
  • Step 3: Place your kabobs on the grill and cook for approximately 10-15 minutes.


  • Wrap Zoës Kitchen Chocolate Chip Cookies or your favorite holiday cookie in decorative bags and tie them with ribbons.
  • Crush up peppermints and sprinkle them on top of a slice of Ya-Ya’s Handmade Chocolate Cake for a festive dessert.
