GREENSBORO, NC -- The Fourth of July weekend is burger time for a lot of us. But if we're not careful, we can be putting bacteria on our bun. In this Restaurant Report Card lesson, Chef and GTCC instructor Al Romano shows us how to prevent that kind of contamination.
He starts by putting the patties on the grill with his bare hands. "It's ok to use your hands because they are going to be cooked."
Then he shows us the plate. "See on the plate here you got all of that blood and stuff left over? I don't want to use the same plate again. Tons of bacteria sitting on this plate believe it or not. You always want to bring another plate out a nice clean plate."
Al says then there's no risk of contamination anywhere. The same rule applies to other things like tongs and spatulas too.
