Pesto

• 1 ½ lb basil

• 2 lb spinach

• 10 oz cilantro fresh

• ¾ cup garlic fresh minced

• 1 cup Parmesan cheese

• 4 tsp black pepper

• 4 tsp kosher salt

• ½ cup Aji-Mirin

• 4 tbs lemon juice

• 3 qt Blended Olive oil

• 1 qt Extra virgin olive oil

1. Separate leaves from basil stems

2. in blender, combine 4 cloves garlic, 2 tsp kosher salt, 2 tsp black pepper, 2 tbs lemon juice, and ½ cup Parmesan cheese

3. Saturate with oil until covered, add fresh basil leaves and continue blending until desired consistency is reached

Goat cheese disk

4 oz goat cheeze

1 tbls parsley

1 teaspoon minced garlic

Combine all components and patty into disks

Chicken Carbanara

6 oz Farfalle pasta

1 oz green peas

1 oz mushrooms

1 oz Parmesan

3 oz cream

3 oz roasted chicken

1 teaspoon minced garlic

1 teaspoon minced shallot

2 oz white wine
