It's been around for generations. It's something so easy to make, your kids can do it! We're talking about a lunchtime favorite: The classic grilled cheese sandwich.

WFMY -- It's been around for generations. It's something so easy to make, your kids can do it! We're talking about a lunchtime favorite: The classic grilled cheese sandwich.

On Thursday, Chef Scott Carter of Goat Lady Dairy joined the Good Morning Show crew to show us some new twists on the old favorite.

His recipes are below.

Greek Goat Lady Dairy Grilled Cheese


Sautéed Spinach (recipe Follows)
2 oz Goat Lady Dairy Farmer's Cheese, crumbled
2 tbs Butter, Room Temperature
8 Slices Sandwich Bread (Sourdough, Italian or French)
8 Oz Goat Lady Dairy Gouda Cheese, Coarsely Grated
Salt and Pepper

- Mix Farmer's Cheese with cooled Sautéed Spinach, season to taste with salt and pepper
- Butter one side of each slice of bread
- Place 4 slices butter side down on work surface
- Distribute Spinach mixture over Bread slices
- Sprinkle Gouda evenly over Spinach
- Top with remaining Buttered Slices
- Heat Large nonstick Skillet over Medium Heat about 2 minutes
- Put assembled Sandwich in pan and cook for 2-3 minutes until underside is Golden Brown
- Turn sandwich and press firmly into pan with spatula, cook 2-3 minutes more
- Turn Sandwich once more and press firmly with spatula again, cook 1 minute more, until cheese is thoroughly melted
- Remove from pan and let cool, 5 min, cut and serve
Sautéed Spinach

1 tbs Olive Oil
1 Large Leek, white and greens parts only, sliced thin
1 clove garlic minced
- Heat Olive Oil in nonstick skillet over Medium Heat
- Add Leeks and cook till soft and slightly brown, 6 to 8 minutes
- Add Garlic and cook for 1 minute, stirring constantly so you don't burn the Garlic
- Add the Spinach and cook till Wilted, but still bright Green, 3 minutes
- Remove from Heat and cool slightly

Goat Lady Dairy Jalapeno Bacon Grilled Cheese Sandwich

8 Slices Bacon
2 tbs Butter, Room Temperature
3 oz Goat Lady Dairy Smokey Mountain Round, Room Temperature
8 Oz Goat Lady Dairy Gouda Cheese, Coarsely Grated
Jalapeno Relish (recipe Follows)
8 Slices Sandwich Bread (Sourdough or Italian)
Salt and Pepper
-Place Bacon in nonstick Skillet over Medium Heat, cook till brown and crisp
- Transfer Bacon to Paper Towel lined plate to cool
- Drain Bacon Grease from pan and wipe out with Paper Towel
- Spread Butter on one side of each slice of Bread
- Place all 8 slices butter side down on work surface.
- Spread Smokey Mountain Round on 4 slices of bread
- Distribute Relish over remaining 4 slices, then top with Shredded Gouda, followed by 2 Bacon Strips
- Top Bacon with remaining Bread slices, Goat Cheese side down
- Heat nonstick Skillet over Medium Heat for 2 minutes
- Place assembled Sandwich into pan and cook for 3-4 minutes until underside is Golden Brown
- Turn Sandwich over with Spatula and press down firmly to Flatten Slightly, cook 3-4 minutes more
- Turn Sandwich once more and press firmly, continue cooking for 1 minute, until cheese is completely melted
- Remove from pan and cool for 5 minutes, cut and serve

Jalapeno Relish
4 oz dried Apricots, coarsely chopped
1 small Onion, finely chopped
1 medium Jalapeno Chile, stem and seeds removed, and minced
1 Serrano Chile, stem and seeds removed, and minced
1 tbs fresh Ginger, minced
1 tbs Fresh Lime Juice
1½ tea dry Mustard
1 tbs Apple Cider Vinegar
1 tbs Salt
-Mix all Ingredients thoroughly in a bowl and allow to marinate at least 1 hr, preferably overnight, refrigerated
