Fast Taco Pie
1 lb. lean ground turkey or beef
1 can (16 oz.) fat-free refried beans
1 cup salsa
2 cup shredded iceberg or chopped romaine lettuce
2 large tomatoes, chopped
1 cup (4 oz.) reduced-fat shredded Cheddar cheese
½ cup fat-free sour cream
1. In a large nonstick skillet, cook the meat over medium-high heat 6 to 7 minutes, or until browned, stirring frequently; drain off excess liquid.
2. Stir in the refried beans and salsa, breaking up the mixture with the back of a spoon. Bring to a boil, reduce the heat to low, and simmer for 5 minutes, or until well combined and heated through, stirring frequently. Remove the skillet from the heat, scrape down the sides with a spatula, and smooth the mixture evenly in the skillet.
3. Arrange the lettuce, tomatoes, cheese, and sour cream in concentric circles (one side the next) on top of the beef mixture and serve immediately. Makes 6 servings.

NOTE: If you prefer, remove the meat mixture to a platter then layer with lettuce, tomatoes, cheese, and sour cream.
