WFMY -- Who says meat has to be involved when it comes to BBQ?

John Parker's father created a North Carolina favorite back in 1962: Guy Parker's Barbecue Sauce.

And on Sunday, Parker shared some of his favorite recipes on the lighter side.

Pineapple Mango Chicken

1 lb of Chicken tenders

1 cup of small cubed Pineapple or Pineapple tidbits

1 cup of diced Mango

1/4 cup of Guy Parker's BBQ Sauce and Marinade

Place chicken tenders in a skillet with just enough water to cover the bottom, pour Guy Parker's BBQ Sauce over the chicken tenders and saute on both sides at medium high until done. Cut the tenders into 1 inch size pieces and add the Pineapple and Mango and stir until all of the fruit is hot. You may add more sauce, if you like more spice than sweetness.

Tomato, Watermelon and Mozzarella Salad

4 cups of seedless watermelon

2 cups of cherry tomatoes sliced in half

1 cup of Mozzarella cheese sliced in ½ inch cubes

Add all ingredients to a bowl toss lightly and pour Guy Parker's vinaigrette over the salad. You may add some basil or fresh mint for added taste.

Guy Parker's Vinaigrette

1 cup of extra virgin olive oil

½ cup of Guy Parker's BBQ Sauce

2 table spoons of honey or Maple syrup to taste (peach or apricot preserve would work well also)

Mix all of these ingredients well to create your own salad dressing. This can also be used as a marinade for any type of meat also. A fresh piece of mint would be a great addition to this dressing.
