Dot's Meatloaf

10 lbs. lean ground beef

2 cups shredded carrots

3 cups shredded cheese

1 onion diced

1 tbsp. basil

Salt and Pepper to taste

10 eggs

1 loaf bread crumbled

3 cups milk

TOPPING

16oz. brown sugar

32 oz tomato sauce

mustard to taste

Mix all main ingredients together and place in baking dish. Bake at 350 degrees for 1 hour. Mix topping and spread over meatloaf and cook an additional 30 minutes.

Deep South Chicken

Boneless Skinless chicken breast breaded in A # 1 breader and fried. Serve over mashed potatoes and smother with gravy.

Mashed Potatoes

20 medium sized red potatoes

7 cups milk

3 tbsp salt

2tbsp white pepper

8 cups sour cream

1 lb margarine

Gravy

1 gallon milk

2 cups crisco

2 cups chicken breader

Mac and Cheese

1/2 stick velveeta

1/2 can basic cheese

1/2 stick margarine

1/2 gallon whole milk

salt to taste

white pepper to taste

1 1/4 gallon of noodles per pot of cheese

Green Beans

(2) 6 lb cans of green beans (drain)

2 scoops bacon grease

1/2 stick butter

salt and pepper to taste

All recipes yield 30-35 servings.
