Shrimp and Grit Bites

-1 cup grits

-2 cups milk

-1 cup heavy cream

-1 cup water

-1 stick butter

-salt and pepper to taste

-1lb medium/large shrimp, cleaned

-4 slices bacon, chopped

-1tsp Cajun seasoning

-1/2 cup onion/pepper mix, chopped

-1/4 tsp garlic, minced

-1/3 cup Parmesan cheese

-1/2 cup pinko breadcrumbs

  1. In a medium saucepan, melt butter. Add milk, cream and water. Bring to a slow boil. 
  2. Slowly pour in grits and stir continuously until smooth. 
  3. Turn heat to low, stirring periodically. Add salt and pepper to taste
  4. Pour grits into a shallow pan and place in refrigerator until firm. 
  5. Cut grits into even sections, set aside. 
  6. In a fryer in pan, heat oil to 350 degrees. 
  7. Coat sections with breadcrumbs and lightly fry. 
  8. In a medium skillet, sauté bacon pieces until done. Remove bacon pieces and return skillet to heat. 
  9. Sauté onions and peppers until caramelized. Add garlic and seasoning. 
  10. Add shrimp and return bacon to pan. 
  11. Top grits squares and top with grated Parmesan cheese and serve
