Revamping Your Leftovers with Chef Felicia

Chicken Roll-Ups

•1-2 cups shredded chicken 

•1/2 cup rice

•1/4 cup sliced onions, peppers, and mushrooms 

•1 cup shredded cheese

•4 egg roll wrappers

• 1-2 tbsp olive oil

1. Preheat fryer to 350 degrees

2. Lightly sauté onions, mushrooms, and peppers in olive oil until tender. 

3. Add shredded chicken

4. Lay out egg roll wrapper on counter. 

5. Spread 1-2 tbsp of rice, shredded cheese, and chicken mixture on wrapper. Roll and seal lightly with water. 

6. Place rolls in fryer for 1-2 minutes until golden brown. 

7. Serve

Beef and Broccoli 

• 1-2 cups cooked rice

•1-2 cups shredded/sliced beef(cooked)

•1 cup broccoli florets (steamed)

•1 tsp sesame oil

• 1/4 tsp ginger

•1/4 tsp Garlic

•1 tsp cornstarch 

•1 tsp soy sauce

•1 tbsp orange juice 

•1/2 cup onions/peppers sliced

1.  In a medium sauce pan, sauté onions lightly in sesame oil. 

2. Add sliced/shredded beef and continue to cook through. 

3. In a medium bowl, combine cornstarch, Garlic, soy sauce, ginger, and orange juice. Pour mixture into sauce pan. 

4. Mix well and serve over rice!
