Muddy Creek is making delicious recipes on Sunday's Good Morning Show!

They're making a Mediterranean Plate filled with veggies, warm pita bread, and homemade dipping sauces including hummus, cucumber-yogurt tzatziki dip and olive tapendate.

Hummus

2 cups garbanzo beans (chickpeas), rinsed and drained

1/4 cup fresh lemon juice

1/4 cup olive oil, or more to taste

1 1/2 tablespoons tahini (sesame seed paste)

4 cloves garlic, minced, or more to taste

1/2 Tb Tamari

1/2 tsp cayenne pepper

Directions

Combine garbanzo beans, lemon juice, olive oil, tahini, garlic, and tamari in a food processor and pulse several times to mix. Process until hummus is smooth, about 1 minute.

Olive Mix

1 16 oz jar Giandiniera Mix

Drain and cut up large items such as peppercinins (remove seeds and stem), onions, and cauliflower.

2 C. Greek Olives

2 C. Reg Black Olives

1 C Green Olives

1TB Capers

1 TB Minced garlic

1 TB oregano

1 TB basil

¾ cup Olive Oil

Handful of shredded carrots

Drain items and place in food processor. PULSE until blended.

Tzatziki:

1/2 English cucumber, peeled

16 oz Cold plain Greek yogurt (either full fat or fat free will work)

4 cloves garlic, minced

1/3 cup chopped dill, fresh or dried

1 1/2 Tbsp freshly squeezed lemon juice

1/4 tsp cayanne pepper
