Filet Medallions and Jumbo Shrimp Chimichurri

Serves 2

Ingredients:

4-4 oz. Beef Tenderloin Medallions, skewered

4 – Jumbo Shrimp (U-15), tail on and skewered

Creole Seasoning

3 oz. - Chimichurri Sauce – We make ours fresh daily, you can purchase your favorite sauce at your local grocery store

Cilantro

Sweet Potato Hash – Diced Roasted Sweet Potatoes and Mushrooms

Directions:

Preheat indoor or outdoor grill to medium/high temperature. Season the tenderloin medallions generously with the creole seasoning and place on the grill.  Grill to desired temperature, approximately 5-6 minutes for medium with a light pick center.  Lightly season the shrimp with the creole seasoning and place on grill.  Grill approximately 2-3 minutes per side.  Place the sweet potato hash and medallions on the plate.  Place the shrimp in front of each filet medallions with tails facing up, pour chimichurri sauce over the shrimp and drizzle on the sweet potato hash.  Garnish with Cilantro and enjoy!
