Cherry Pit Cafe Recipes: Southern Sliders With Fried Green Tomatoes & Strawberry Pie

Southern Sliders

2 Fried Green Tomatoes

2 slices Bacon (cooked)

2 ounces Pimento Cheese

4 rings of red onion, grilled

1 TBSP garlic butter

2 TBSP Pesto Mayo

2 Slider buns

1. Spread ½ TBSP Margarine on each slider roll.

2. Grill rolls cut side down for one minute or until golden brown.

3. Fry green tomatoes until golden brown (approx.. 3 min.)

4. Cook bacon on grill until crisp.

5. Heat pimento cheese.

6. Place one Fried Green Tomato on each roll.

7. Place one piece of bacon on tomato.

8. Pour 1 ounce of Pimento cheese on top of bacon.

9. Place 2 onions on each sandwich.

10. Serve immediately.

Fried Green Tomatoes


1 Cup Cornmeal

1/3 tsp Cayenne

1 tsp Seasoning Salt

1 tsp Black Pepper

dash Ground Ginger

Green Tomatoes, sliced ¼”

1 Cup of All purpose Flour

2 whisked whole eggs

1 recipe of Fried Green Tomato Breading

Oil of choice for cooking

1. With a gloved hand, coat tomato with flour.

2. Transfer tomato to bowl of eggs.

3. Submerge tomato so that both sides are completely coated.

4. Transfer tomato to bowl of Breading.

5. Press tomato into breading for even coverage.

6. Flip tomato and press into breading again.

7. Cook tomatoes in 350 degree oil until golden brown.

Serve hot.

Pie Dough

1 1/2 Cups {Pastry Flour

1 TBSP Powdered Sugar

1/2 tsp Salt

1/2 Cup shortening (cold), cubed

1/4 Cup ice cold water

1. In a large bowl, mix flour, sugar and salt.

2. Add shortening and coat with dry ingredients.

3. Using your hands (or pastry blender), mix until the mixture resembles a course, damp meal.

4. Add half of the water to mixture.

5. Gently mix until water is absorbed.

6. Slowly add more water while mixing.

7. Only add enough water for dough to become damp and barely holds together.

8. Do not over mix.

9. Do not knead.

10. Form dough into a ball and refrigerate for 1-24 hours.

11. On a floured surface, use a rolling pin to flatten the dough to a depth of 1/8”.

12. Transfer dough into pie tin.

13. Crimp edges using fingertips or crimping tool.


Strawberry Pie Filling

3 ounces Water

8 ounces Sugar

3 Cups Strawberries (frozen)

¼ Cup Cornstarch

3 ounces Water

1. Mix Water #1 and Sugar in pot on medium heat.

2. Add Strawberries.

3. Bring Strawberry mixture to a slow boil.

4. Mix water #2 with cornstarch.

5. Add cornstarch mixture to pot.

6. Boil two minutes while stirring.

7. Transfer to shallow pan and refrigerate.
