Southern Cooking With SidWill's Cafe

Joining us in the News 2 Kitchen are the chefs and owner's of SidWill's Cafe and Catering. On the menu today, Cornbread Dressing and Hawaiian Glazed Grilled Pork Loin. Enjoy!

Southern Style Cornbread Dressing 

Cut or crumb cornbread into cube, place on a cookie and allow to day out overnight, then bake at 400 degrees, stir frequently until brown (12-15 minutes)

1/2 stick of butter

2 medium onions, diced medium

2 medium celery stalks, diced small

6-8 cup of cornbread (diced and toasted

4 cups firm sandwich bread (cut into 1/2 cubes , dried and toasted

1/4 cup minced parsley leaves

1 tsp rubbed sage

1 tsp thyme leaves

3/4 tsp salt

1/2 tsp black pepper

1 cup chicken broth

2 large eggs

Heat butter in a large skillet over medium heat, add onions and celery, sauté 8-10 minutes

Transfer to a large bowl; add cornbread, bread cubes and remaining ingredients. Toss to combine.

Turn into a 3 quart buttered  casserole dish and bake until top forms a crust (30-40 minutes)

SidWill's Hawaiian Glazed  Grilled Pork Loin 

boneless pork loin ( sliced 1/2 inch thick)

salt

black pepper

season salt

butter spray

sweet and sour dressing or BBQ sauce

Spray pork loins with butter spray, sprinkle salt, black pepper and season salt ( marinate overnight).  Heat cast iron skillet on high heat, grill pork loins about 4-6 minutes on each side

Add your favorite sauce and enjoy!
