Pesto Topping

8 ounces Cream Cheese

¼ Cup Pesto

1 ounce Olive Oil

1. Whisk all ingredients together in a mixing bowl until thoroughly combined.

Pimento Cheese Sticks

Flour Mix

1 Cup1 Flour

½ Cup Cornstarch

1. Mix together and put in shallow pan

Egg Mix

16 ounces Whole Eggs

2 ounces cold water

1. Mix together and put in shallow pan

Breadcrumbs

3 Cups Plain Breadcrumbs

2 tsp Garlic Powder

1 tsp Salt

2 tsp Black Pepper

1. Mix together and put in shallow half pan

Flour Eggs Breadcrumbs

1. Roll 1 ounce of Pimento cheese into a log about 3" long. Place on sheet pan with parchment paper. Freeze until solid.

2. Coat frozen cheese stick in flour mix.

3. Place cheese stick in egg mix and coat very well. Make sure it is completely covered in egg.

4. Place cheese stick into breadcrumb mix and coat well. Gently squeeze to make sure breading sticks.

5. Place on sheet pan with parchment paper. Freeze.

6. Submerge in 350 degree oil for 3-5 minutes (until cheese sticks float to top).

Pimento Cheese PREP

1 ½ lbs Extra SHARP Cheddar (shredded)

½ lbs Cream Cheese

½ Cups Mayo

½ tsp Garlic Powder

¼ tsp Cayenne

¼ tsp Onion Powder

½ tsp Black Pepper

4 ounces Pimentos, drained

1. Combine all ingredients in a mixing bowl.

2. Using a whisk or gloved hands, thoroughly combine all ingredients.

3. Refrigerate.

Bacon Wrapped Pesto Chicken

6 pieces chicken breast (4 oz)

Salt & Pepper

12 pieces bacon

6 ounces Pesto Topping

1. Place chicken on parchment paper covered sheet pan.

2. Sprinkle salt & pepper on top of chicken.

3. Place one ounce of Pesto Topping on each chicken breast. Lightly press down and spread with gloved hand.

4. Wrap each breast with two pieces of bacon each.

5. Bake uncovered at 350 degrees for 16-18 minutes or until internal temperature reaches 165 degrees.

6. Grill two minutes on each side to crisp bacon.
