We're joined in the WFMY News 2 Kitchen with Michael Carroll from Bad Daddy Burger Bar. We're learning the secrets behind the "Baconnaise" sauce for the Bacon Cheeseburger and the "Root Beer BBQ Sauce" for the Bad BBQ Beer Burger. Enjoy!
"Baconnaise" for the Bacon Cheeseburger on Steroids
Monterey Jack Cheese, 3 pieces of Jalapeno Bacon, 3 pieces of Applewood Smoked Bacon, Housemade Bacon Mayo (Baconnaise), Shredded Iceberg Lettuce, Tomato, Red Onion, and Pickles
Baconnaise:
4 cups of Mayonnaise
1/4 cup of diced applewood bacon
1/4 cup of diced jalapeno bacon
1 oz red wine vinegar
1 oz seasoning salt
1/2 oz water
Instructions: Mix all ingredients together and refrigerate. Recipe makes 1 quart.
"Root Beer BBQ Sauce" for the Bad BBQ Beer Burger
Housemade American Cheese, 2 pieces Applewood Smoked Bacon, Double Beer Battered Onion Ring, Root Beer BBQ Sauce, Shredded Lettuce, Tomato, and Pickles
Root Beer BBQ Sauce:
24 oz "Not Your Father's Root Beer" beer (2 bottles)
1 Ginger Root
1 1/2 cups Kansas City style BBQ Sauce
1 oz of Salt
1 oz Cracked Black Pepper
Instructions: Pour beer and peeled ginger into pot and reduce under high heat for about 20 min, until it has reduced down half way. Remove ginger from mixture. Add in BBQ sauce and Salt and Pepper and let simmer for another 20 minutes. Cool and refrigerate. Recipe makes a little less than 1 quart.
