Tomato Pie
Ingredients:
1/4 red onion, diced
2-3 whole tomatoes, diced and drained
4 basil leaves, chopped
3/4 cup shredded cheddar
3/4 cup shredded mozzarella
3 ounces mayonnaise
1/2 tsp Texas Pete hot sauce
1/4 tsp salt and pepper
1 raw 9'' pie shell (see recipe below)
Directions:
-Toss all ingredients together in a mixing bowl.
-Fill raw pie shell level to the top.
-Bake 35 minutes at 375 degrees.
Pie Dough
Ingredients:
1 1/2 cups pastry flour
1 tbsp powdered sugar
1/2 tsp salt
1/2 cup shortening (cold), cubed
1/4 cup ice cold water
Directions:
-In a large bowl, mix flour, sugar and salt.
-Add shortening and coat with dry ingredients.
-Using your hands (or pastry blender), mix until the mixture resembles a course, damp meal.
-Add half of the water to the mixture.
-Gently mix until water is absorbed.
-Slowly add more water while mixing.
-Only add enough water for dough to become damp and barely holds together.
-Do not over mix.
-Do not knead.
-Form dough into a ball and refrigerate for 1 to 24 hours.
-On a floured surface, use a rolling pin to flatten the dough to a depth of 1/8''.
-Transfer dough into pie tin.
-Crimp edges using fingertips or crimping tool.
The Cowboy Burger
Ingredients:
2 burger patties (cook medium well)
2 pieces of grilled parmesan cheese bread
2 ounces sauteed mushrooms
2 ounces sauteed onions
shredded iceberg lettuce
1 sliced tomato
2 slices American cheese
2 strips bacon, cooked
1 ounce A-1 Sauce
Directions:
-Season burger patties with salt and pepper. Cook to medium well.
-Cook bacon until crisp.
-Grill parmesan bread (cheese side down) until golden brown.
-Melt 1 slice of cheese on each patty.
-Sautee mushrooms and onions.
-Place lettuce and tomato on bottom slice of bread.
-Place first patty on top.
-Add mushrooms.
-Place second patty on top.
-Add onions.
-Add bacon.
-Drizzle with A-1 Sauce.
-Place second slice of bread on top.
