Ingredients

1 lb bacon

1 1lb ground beef

2 Tablespoons fresh minced garlic

2 Tablespoons Worcestershire sauce

1 teaspoon kosher salt

1/2 teaspoon fresh cracked black pepper

1/2 Cup shredded cheddar cheese plus 1/2 Cup for topping burgers

2 seeded onion rolls, split and toasted

4 Tablespoons mayonnaise

1 Cup shredded iceberg lettuce

4 slices tomato, 1/2 inch thick

4 baked onion rings

2-4 Tablespoons BBQ sauce (I used KC Masterpiece)

Directions
Preheat grill to high.

Fry bacon in a large skillet over medium heat until browned and crisped. Drain and save drippings.

In a large bowl combine the beef, garlic, Worcestershire sauce, salt, pepper and cheddar cheese. Form into 2 large patties and make a slight indentation in the center of the burger to prevent it from doming up in the center. The indentation will rise as your burger cooks. Grill for 4-5 minutes each side. During the last few minutes, add additional cheddar cheese to melt.

Toast buns on low or indirect heat.

Place mayonnaise, lettuce and tomato slices on bun, top with burger, cheese, bacon and 1/4 cup barbecue sauce on bottom rolls. Add 2 onion rings. Serve and enjoy!

Ingredients

Southwest Seasoned Burger
2 (10-inch) flour tortillas
2 tbsp butter, softened
1/3 cup shredded Pepper Jack cheese
1/3 cup shredded Cheddar cheese
1/2 medium tomato, chopped
2 tsp diced red onion
1 tsp diced canned jalapenos
1 slice bacon, cooked
leaf lettuce
southwest seasoning

Southwest Seasoning Mix
2 teaspoons ground cumin
2 tablespoons paprika
1 teaspoon black pepper
1 teaspoon cayenne pepper
crushed red pepper flakes, to taste
1 teaspoon salt
1 tablespoon dried oregano

Directions
Use one heaping Tablespoon of seasoning mix per pound of hamburger meat. Mix into hamburger meat until well combined. Fry or grill.

Heat a large frying pan over medium heat. Spread half the butter on one side of each tortilla. Put one tortilla, butter side down in the hot pan. Sprinkle the cheeses evenly onto the center of the tortilla in the pan.

Put the tomato, onion, lettuce, bacon and jalapeno over the cheese, add the seasoned burger and cover with the other tortilla butter side up.

When the bottom side is browned, about 45-90 seconds, flip the quesadilla and grill the other side. Remove the quesadilla from the pan and, using a pizza cutter, cut through the middle like a pizza. Serve with Pico de Gallo and ranch dressing or favorite dipping sauce.
