Eat Out For A Good Cause In Rockingham County

Today you can eat out at local restaurants and help feed homebound seniors in Rockingham County.

ID=70371582GREENSBORO, N.C. -- Today, you're off the hook for lunch and dinner. Instead, you can eat out and help seniors in Rockingham County at the same time.

Meals on Wheels of Rockingham County is hosting their "5th Annual Eat Out, Help Out Fundraiser." The Aging, Disability & Transit Services of Rockingham County is joining forces with local restaurants to raise money for homebound seniors.

Kristen Perry, Director of ADTS says funding hasn't kept up with the need and currently they have 140 seniors on a waiting list to receive "Meals On Wheels." Since 2011, this event has raised more than $13,000 and they hope to continue raising more money.

The event is happening all day today, Tuesday March 24, 2015. Click here for a list of restaurants participating in this fundraiser.

One of them is "24 Blackbirds" and owner, Tara Ferrell stopped by the Good Morning Show to show you one of her restaurant's most popular dishes.

Chicken Pomodori Panini

Ingredients:
Ciabatta Roll
Sliced Chicken Breasts
Mayonnaise
Pesto
Oven Roasted Tomatoes
Marinated Artichokes (canned or jarred)
Fresh Spinach
Provolone Cheese

Instructions:
Heat the Panini Grill or Grill Pan on Medium High Heat.
Spread the mayo and pesto on each side of the ciabatta roll.
Place sliced chicken breasts on bottom side of roll. Top with oven roasted tomatoes, artichokes, fresh spinach and provolone cheese.
Place the top half of the roll back on sandwich. Place on heated panini grill and close the top. Grill for approximately 4 minutes.
Remove from grill, let rest for about a minute, cut in half and enjoy!
